Tailgating Recipe: On the Lighter Side

Football season is in high gear. Are you ready for your next tailgate party? Lighten it up with this delicious but healthy recipe from Carilion Clinic's registered dietitian.


Ingredients:  XXXX

1 large bag frozen spinach
16 oz. container fat-free sour cream
1 package Knorr soup mix
1 can water chestnuts, diced
1/2 jar roasted red peppers, diced
1/2 cup chopped green or black olives
1 green onion, diced


Preparation:  XXXX

  1. Thaw spinach and squeeze out all of the juice.
  2. Add all of the ingredients to a large mizing bowl and blend.
  3. Cover and refrigerate for at least one hour.
  4. Serve with vegetable sticks.
