Potato and Turkey Bacon Egg Scramble

Make Sunday morning breakfast extra special this week with this easy egg dish. This one will please everyone with the addition of potatoes, cheese, a little spice and bacon (shhh...don't tell anyone it's turkey bacon). Or customize it to fit your tastes by adding in some of your favorite chopped veggies.
And don't be scared of using whole eggs. The yolks are good for you and they contain choline, which promotes normal cell activity, liver function and the transportation of nutrients throughout the body.

8 eggs scrambled soft
1 baked potato, diced
4 strips turkey bacon, cooked and chopped
¼ cup low sodium shredded cheese
2 tsp ancho paste or powder
Salt and pepper to taste
- Add all ingredients in a bowl, mix well.
- Layer egg mixture in a baking dish.
- Bake at 350 degrees for 10 minutes.
