Potato and Turkey Bacon Egg Scramble

Servings: 4
Prep: 15 minutes

Summary:  XXXX

Make Sunday morning breakfast extra special this week with this easy egg dish. This one will please everyone with the addition of potatoes, cheese, a little spice and bacon (shhh...don't tell anyone it's turkey bacon). Or customize it to fit your tastes by adding in some of your favorite chopped veggies.

And don't be scared of using whole eggs. The yolks are good for you and they contain choline, which promotes normal cell activity, liver function and the transportation of nutrients throughout the body.

Special thanks to Darla Mehrkens, Jake Peabody, Destiny Chambers and Brendan Wilmer of Carilion Clinic's Dining and Nutrition Services team for putting together this delicious recipe.
