No-Shame Shamrock Shake

We’ve probably all been tempted at least once by a certain neon-green milkshake that comes out this time of year at a certain fast-food chain.
The folks at Earth Fare have turned that guilt around with a healthier take on minty smoothies just in time for St. Patrick’s Day.
This No-Shame Shamrock Shake gets some of its creamy richness from your ice cream of choice, but most of it comes from a healthy blend of bananas and avocado. Add fresh mint and peppermint extract and you've got an indulgent minty treat worth celebrating ... in moderation, of course!
2 heaping scoops coconut milk ice cream (or ice cream of choice)
1 large frozen banana
1/2 avocado (or 2 tablespoons coconut oil)
3 tablespoons fresh mint, coarsely chopped
3/4 teaspoon peppermint extract
1/2 cup coconut-almond milk (or milk of choice)
Whipped cream (dairy or non-dairy) and cacao nibs (or dark chocolate chips) for optional garnish
- Add all ingredients (except whipped cream and cacao nibs) to a blender, and blend on a high speed until fully combined.
- Divide between two glasses and garnish with whipped cream and cacao nibs.
