Just Peachy Chicken Salad

Forget peaches and cream. We have peaches and chicken! Trust us, it is a delicious twist on the same old chicken salad you have had too many times before.
Fresh peaches and pecans add sweet and crunchy touches to chicken blended with mayonnaise and … lowfat yogurt?
“Blending yogurt with mayonnaise decreases the fat content and adds probiotics to an already healthy recipe,” said Angela Charlton, R.D.N., a Carilion Clinic registered dietitian and nutritionist. “Probiotics are necessary to keep our digestion and immune systems functioning properly.”
This mayonnaise-yogurt blend can be used in other potluck recipes, such as potato and macaroni salads, and it can also be used as a healthy substitute for sour cream.
Plus, it is a great way to use up those peaches that are starting to look suspect in your fruit bowl. Serve it on a bed of spinach to pack in even more phytonutrients.
3 cups fresh peaches (peeled and diced)
2 cups cooked chicken breast (diced)
1/2 cup golden raisins
1 cup chopped pecans
1/2 cup chopped celery
2 cups low-fat mayonnaise
1/2 cup low-fat yogurt
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon pepper
- Place peaches, chicken, raisins, pecans and celery in a bowl.
- Toss gently to mix.
- Mix mayonnaise, yogurt, nutmeg, salt and pepper in a separate bowl with a whisk to combine.
- Pour over peach and chicken mixture.
- Toss gently to combine and chill before serving.
