Creamy Broccoli Salad

Who said eating your vegetables is boring? Not anyone who has ever tried this creamy broccoli salad from our Dining and Nutrition Services team.
This salad is creamy with a satisfying crunch from the broccoli and celery and a hint of sweetness thanks to the addition of grapes and raisins.
Broccoli makes an ideal vitamin-packed dish, and studies have shown that consuming more plant foods like broccoli decreases the risk of obesity, diabetes, heart disease and overall mortality while promoting healthy skin and hair, increased energy and overall lower weight.
Plus, it can help lower your risk of cancer. A win-win in our book.
4 cups small broccoli florets (about 1 1/2 pounds)
1 1/2 cups seedless green grapes, halved
1 cup chopped celery
1 cup raisins
1/4 cup salted sunflower seed kernels
1/3 cup light mayonnaise
1/4 cup plain fat-free yogurt
3 tablespoons sugar
- Combine the first five ingredients in a large bowl.
- Combine mayonnaise and remaining ingredients, stirring with a whisk.
- Pour dressing over broccoli mixture, and toss well.
- Chill for one hour.
