Corn Avocado Salad

This recipe is ridiculously easy and ridiculously tasty. Hit the grocery store on the way home tonight and whip this one up immediately. You won't regret it.
Crisp corn and sweet grape tomatoes add flavor and a healthy dose of fiber along with lycopene, magnesium, potassium and vitamins A, B and C. And you can't beat the nutritional value of avocados. Avocados provide 20 vitamins and minerals and monounsaturated fat (the good kind)!
Have it as a side or fill it out with some spinach for a lazy weekend meal. Enjoy!
Per serving: 101 calories, 7 g fat, 2 g protein, 4 g fiber
1 medium avocado, diced
3/4 cup frozen corn, thawed
1/2 cup quartered grape tomatoes
1 tablespoon chopped fresh cilantro
2 teaspoons lime juice
1/4 teaspoon kosher salt
- Toss avocados, corn, tomatoes, cilantro, lime juice and salt in a medium bowl.
