Mid-to-late summer is black raspberry season at Morningside Urban Farm, where our Community Health and Outreach team loves using them to whip up these colorful berry parfaits in five minutes or less.
Berries are low in calories and high in fiber, vitamin C, potassium and antioxidants. They can benefit heart health and even help lower blood pressure and cholesterol. Plus, yogurt gives a boost in vitamin D and calcium for strong bone health.
Bonus: These parfaits are an easy way to get your kids excited about nutritious treats!
Ingredients

2-3 cups mixed blueberries and raspberries
4 cups yogurt (plain, vanilla or Greek)
2 cups granola
Preparation

- Wash and dry the berries.
- Spoon a layer of yogurt into four individual glass bowls or parfait glasses.
- Add a layer of berries, and sprinkle with a layer of granola.
- Repeat the layering once or twice more, depending on the height of the bowl or glass, ending with a layer of granola.
