Marinated Cabbage Salad

Cabbage is packed with nutrients, is good for digestion and can help lower blood pressure and cholesterol. Carrots are antioxidant-rich and a great source of fiber. Throw in low-calorie jalapenos and spice things up in this healthy, bright salad with a kick.
Serve alongside grilled meat or make it a veggie dish by adding tempeh or black beans.
1 small head of cabbage, diced
1 small red or orange pepper, diced
1 cup shredded carrot
1 fresh jalapeno, seeds removed, diced
2 tablespoons olive oil
1 tablespoon orange juice
1 tablespoon orange marmalade
1 tablespoon chopped fresh cilantro
1 teaspoon red pepper flakes
- Place cabbage, red pepper, carrot and jalapeno in a large bowl and set aside.
- Mix the olive oil, orange juice, orange marmalade, cilantro and red pepper flakes to make a marinade.
- Pour the marinade over the vegetables and allow to sit at least 15 minutes before serving.
