Tailgating Recipe: On the Lighter Side

Football season is in high gear. Are you ready for your next tailgate party? Lighten it up with this delicious but healthy recipe from Don Mankie, a Carilion Clinic registered dietitian.
1 large bag frozen spinach
16 oz. container fat-free sour cream
1 package Knorr soup mix
1 can water chestnuts, diced
1/2 jar roasted red peppers, diced
1/2 cup chopped green or black olives
1 green onion, diced
- Thaw spinach and squeeze out all of the juice.
- Add all of the ingredients to a large mizing bowl and blend.
- Cover and refrigerate for at least one hour.
- Serve with vegetable sticks.
