Super Bowl Veggie Chili

This vegetarian chili recipe from our own Don Mankie, a Carilion Clinic registered dietitian, is full of fiber and veggie goodness with just the right amount of spice to give it a little kick.
Plus, it is an inexpensive meal that is a snap to pull together. Try it this weekend to satisfy a Super Bowl crowd of adults and kids of all ages.
1 Tbs. olive oil
1 cup each onions and peppers, chopped
3 garlic cloves, minced
1 16 oz. can tomatoes
1 16 oz. can tomato sauce
2 Tbs. chili powder
1 Tbs. cumin powder
½ tsp. salt
1 can kidney beans
1 can pinto beans
1 ½ cups frozen corn
- Saute vegetables in the olive oil until soft.
- Add spices and cook 2 minutes.
- Add remaining ingredients and simmer 1 hour.
